February 4 is National Stuffed Mushroom Day, go figure, but hey, let’s celebrate one of my favorite veggies! I love all things mushroom and this Portabella recipe is really special. It is in my second cookbook, Eclectic Entertaining – Small Plates & Dainty Desserts, but I’m sharing it with you right here! Give this veggie/small plate recipe a try and I promise it will become a favorite. Stuffed Portabella Mushrooms will please all your vegetarian, gluten free and healthy-eating, eclectic friends. Portabella Mushrooms are fun because they are huge platforms just begging to be filled with delicious mixtures of anything your imagination can dream up. You may also make them with vegetables, seafood, chorizo…..the possibilities are endless. They may also be enjoyed grilled, broiled or roasted and have even been known to impersonate burgers for our vegetarian friends. Yup, it is crazy but so versatile so give them a try!
