Irish Soda Bread for St. Patrick’s Day

This Irish Soda Bread is a favorite quick bread of mine that may be enjoyed any day of the year. I bet you have all these ingredients on hand like I do. Saturday I ran a 5 K “Shamrock Stampede” (and placed 2nd in my age group!) and now I’m baking this really easy bread. Instead of using yeast, soda bread calls for baking soda for leavening, hence the name. Does it get any easier than this? I think not.

If you have all the ingredients but the buttermilk, no worries. Do not make a special trip to the market for one item. Instead, put one teaspoon vinegar in a measuring cup. Then fill the rest of the way, 3/4 cup in this recipe, with your favorite milk. I always have almond milk on hand so would use it.

Why does Irish Soda Bread call for cutting a cross on top? It is to ward off the devil. If you have never had soda bread, I liken it to being a giant scone. It is flakey and not overly sweet, butter it… or not. Happy St. Patrick’s Day!
