Oodles of Zoodles

Surely you have heard of the latest “zoodle” craze and may have jumped on board as have I. “What is a zoodle?” you ask. It is zucchini cut into noodle-shapes = zoodles. Anyone looking for a lower-calorie, healthy alternative to pasta needs to know about this! Zucchini is impersonating noodles?! Yes! And to make the process even easier, Cuisinart has created this electric “zoodler,” my name, with 8 different shapes. I get nothing for promoting it but will do so because I love it. Hey, any gadget that makes my life easier deserves a shout-out. I also own a smaller, non electric Gefu spiralizer for travel. Yes, I take my cooking seriously!

Here’s what I did:

Preheat your oven to 350 degrees. Wash and trim ends off of several (I used 8) zucchini. Push through your zoodler and place all zucchini in a large bowl. Coat vegetables with favorite olive oil (EVOO, butter flavored, avocado, etc.) and toss. Season with turmeric, seasoned salt and freshly ground pepper.

Spread zoodles evenly on a jellyroll pan. Place in oven and cook for 3 minutes. Toss and cook for another 3 minutes. I love mine al dente. Cook longer if you prefer a less-crunchy texture. These may also be sautéed or boiled one minute, drained and seasoned. Serve with a yummy protein and you have an awesome meal.
