Grilled Lobster with Herb Filling adapted from Delish.com

Ingredients

  • 6 lobster tails
  • 1/4 cup melted butter
  • 1 medium lemon, zested and juiced
  • 1 medium garlic clove, peeled
  • 3/4 cup fresh parsley, washed and dried
  • salt and pepper to taste
  • Extra virgin olive oil (EVOO) for brushing
  • 6 wooden barbecue skewers

Method

Step 1

Using kitchen scissors, trim underside of lobster and discard non-meat parts. With both hands holding each side of the tail, crack lobster on both sides to expose the meat. With wooden skewers, push one lengthwise into each tail the entire length. This prevents the tails from curling during grilling. Set aside until filling is ready.

Step 2

Into the bowl of a food processor, add melted butter, lemon zest and juice, garlic clove, parsley, salt and pepper. Whirl until creamy. Set aside. If made in advance, which I strongly recommend, place in small bowl and refrigerate until ready to use.

Step 3

Prepare hot grill and spray grill mat with cooking spray. When ready to grill, brush meat side of lobsters with EVOO and place on grill mat meat side down for six minutes. Remove herb filling from refrigerator. Flip lobsters over and spoon filling into each one, using about two tablespoons per tail. Grill another six minutes. Remove from grill and remove skewers and discard. Serve hot.
